Crispy kale chips and aubergine slices are quick and easy to prepare to have with a meal, or as a snack. This recipe is not only delicious, but it is also packed with nutrients. With just a handful of ingredients, you can make a dish for the whole family to enjoy.

Ingredients: 


Fresh kale (either by seed or seedlings) 
Aubergine (eggplant) 
Olive oil 
Salt 
Pepper 
Feta (optional) 

Instructions:

Step 1:  
Slice up some fresh aubergine and fry them with a light drizzle of olive oil. To avoid oxidation, get those slices sizzling in a pan ASAP. A dash of salt and pepper adds flavour. 

Step 2:
To turn your kale into crunchy, delicious chips, remove the spines if you wish, or leave them for that extra crunch.  Fry them up in a pan with a little veggie oil. Pop a lid on to avoid oil splatter. Once you are done frying them, place them onto paper towels to drain off any excess oil.  

Step 3:
On your plate, arrange the aubergine slices, crumble some feta if you prefer, and top it all with the kale chips. Sprinkle salt and pepper, and voila! A tasty dish packed with nutrients and flavour!
