TOMATO AND MOZZARELLA STACK WITH BASIL CREAM

18 slices tomato

18 slices mozzarella

BASIL CREAM

30g fresh basil

125ml mayonnaise

250ml cream

2.5ml minced chilli

coarse salt and black pepper

Process the basil and mayonnaise in a food processor. Add the cream, minced chilli and seasoning. Process just enough to combine.

Make stacks of the tomato and mozzarella on a large platter. Spoon the basil cream around the stack and decorate with a basil leaf.

Serves 6-8

BAKED FETA PESTO FUSILLI

250g fusilli cooked “al dente”

150g feta, crumbled

175ml olive oil

10ml minced garlic

90g Italian parsley

coarse salt and black pepper

80ml pasta water (reserved from cooking the pasta)

3 eggs

60ml milk

freshly grated parmesan

Preheat the oven to 180°C. Boil the fusilli until “al dente”. Set aside. (Reserve some of the water from the pasta.)

Place the feta, olive oil, Italian parsley, garlic, pasta water, coarse salt and pepper in a food processor.

Beat the eggs with the milk in a separate bowl. Add the feta mixture to the eggs and grate in some parmesan cheese to taste. Toss with the cooked pasta.

Place in a pre-sprayed ovenproof dish. Bake for about 20-25 minutes.

Serves 6-8

PASTA PRIMAVERA

250g linguine

5ml minced garlic

2.5ml minced chilli

45ml olive oil

6 small zucchini, diced

1 small to medium eggplant, diced

150g mushrooms, sliced

coarse salt

black pepper

300g rosa tomatoes

½ x 410g tin chopped Italian tomatoes

150g fresh asparagus, cut into small pieces

4-5 sun-dried tomatoes, chopped

sugar to taste

Cook the linguine in boiling water until just “al dente”. Sauté the garlic and chilli in the olive oil just to heat through. Add the zucchini, eggplant and mushrooms. Season with salt and pepper. Sauté on medium heat for a few minutes to soften the vegetables.

Add the rosa tomatoes and cover the pan with a lid. Simmer on low heat for at least 20-25 minutes. Then add the chopped tomatoes, asparagus and sun-dried tomatoes. Adjust seasoning and add extra olive oil if sauce is a little dry.

Toss everything together. Heat through for about 5 minutes
