KIDDIES’ FISH FINGERS
350g cooked hake
300g mashed potato
30ml butternut purée
10ml Italian parsley, chopped
coarse salt and black pepper
60ml olive oil
Mix all the ingredients, except for the oil, in a bowl. Mash lightly with a fork to bind. Shape into fingers and place on a lined baking tray. Refrigerate for about 20 minutes.
Preheat oven to 200°C. Spray the fish fingers with olive oil spray or brush with the olive oil and bake for about 20 minutes or until golden.

BBQ CHICKEN KEBABS
SAUCE
250ml BBQ sauce
45ml tomato sauce
15ml Worcester sauce
15ml soya sauce
Mix all the sauce ingredients together. Set aside.
15 chicken thigh fillets, each cut into 3 pieces
kebab sticks
Preheat the grill in the oven.
Cut the chicken thighs into small pieces. Thread 5 pieces each onto the kebab stick. Place them on a lined baking tray.
Brush with the sauce on all sides. Place under the grill in the oven for about 10-15 minutes until golden, then turn and grill on the other side for another 10-15 minutes.

POTATO WEDGES
potatoes
olive oil
coarse salt and black pepper
Preheat oven to 200°C. Cut the potatoes into wedges with skin on. Drizzle with olive oil and season with salt and pepper. Roast until the wedges are crispy and golden.
Serve the kebabs with the potato wedges.
CHICKEN BURGERS WITH CHUTNEY SAUCE
750g minced chicken breasts
45ml soya sauce
8 baby salad onions, chopped
15ml Worcester sauce
15ml balsamic vinegar
30ml BBQ sauce
10ml Ina Paarman Rosemary and Olive seasoning
coarse salt and black pepper
Mix all the ingredients together. Shape into 6 large hamburger patties.
Heat a frying pan or grilling pan and drizzle with a drop of olive oil. Cook the patties on each side until browned and cooked through. They will be cooked through when firm to the touch.
6 hamburger buns
6 slices tomatoes
6 lettuce leaves
Cut the hamburger buns in half and layer with lettuce, tomato and a patty.
SAUCE
15ml chutney
60ml mayonnaise
10ml sweet chilli sauce
10ml lemon juice
coarse salt and black pepper
Whisk sauce ingredients together and serve as an accompaniment to the hamburger patties.

SORBET TERRINE
500ml orange sorbet
500ml raspberry sorbet
500ml lemon sorbet
Set each layer of sorbet on top of each other into individual tins or in 1 large tin. Serve with fresh fruit.
