CRANBERRY PISTACHIO BISCOTTI

375ml dried cranberries

625ml flour

250ml sugar

2.5ml bicarbonate of soda

2.5ml baking powder

3 large eggs

5ml vanilla

pinch of salt

250ml pistachios

Soak the cranberries for 5 minutes in boiling water to soften them. Drain and set aside.

Preheat the oven to 160°C.

Mix the flour, sugar, bicarbonate, baking powder and salt together.

Add the eggs and the vanilla and beat until the mixture forms a dough. Add the cranberries and pistachios and mix at a low speed.

Flour your hands. Divide the dough into 3 and form into 3 logs. Place them on a lined baking tray and bake for 25-30 minutes. Cool for a few minutes, then cut diagonally into slices. Place back onto the baking sheet and reduce oven temperature to 120°C.

Bake for about 30 minutes or until dried out, turning them over halfway.

RED VELVET CUPCAKES

WITH CREAM CHEESE ICING

625ml cake flour

30ml cocoa

7.5ml salt

Sift the dry ingredients. Set aside.

2 eggs

375ml sugar

375ml oil

250ml buttermilk

5ml vanilla

7.5ml bicarbonate

5ml white vinegar

45ml red food colouring

Preheat oven to 180°C.

Whisk dry ingredients together. Set aside.

Beat the eggs and sugar together until creamy. Add the remaining moist ingredients and beat well. Add the food colouring last. The mixture should be a very deep red. Then add the dry ingredients and beat until well mixed.

Fill cookie cups ½ full. Bake for 20-25 minutes or a little longer if necessary.

ICING

125g cream cheese

125g unsalted butter, softened

500g icing sugar

Beat the cream cheese and unsalted butter together until softened. Then add the icing sugar and beat well until light and fluffy.

TOBLERONE MUFFINS

625ml flour

15ml baking powder

160ml castor sugar

125ml ground almonds

90g unsalted butter, melted

1 egg

310ml buttermilk

150g Toblerone, chopped

Preheat oven to 180⁰C.

Sift the dry ingredients and set aside. Melt the butter and add the egg and buttermilk. Fold gently into the dry ingredients. Lastly, stir in the Toblerone,

Place in pre-sprayed muffin tins and bake for about 20 minutes.
