Tomato and Mozzarella Stack with Basil Cream
Serves 6-8
Ingredients
- 18 slices tomato
- 18 slices mozzarella
- BASIL CREAM
- 30g fresh basil
- 125ml mayonnaise
- 250ml cream
- 2.5ml minced chilli
- coarse salt and black pepper
Method
- Process the basil and mayonnaise in a food processor. Add the cream, minced chilli and seasoning. Process just enough to combine.
- Make stacks of the tomato and mozzarella on a large platter. Spoon the basil cream around the stack and decorate with a basil leaf.
