
Stir fry Broken Rice with Chinese Sausage and Gai Lang
Ingredients
- 1 cup broken rice
- clove garlic
- 1 chilli
- 2 eggs
- 1 tsp ginger chopped
- 1 tbsp spring onions chopped
- Chinese sausage
- 1/4 cup coriander
- 2 tbsp Fried shallots
- 2 tbsp sesame seeds
- 75 g tempeh
- 1 bunch gai lang
- 1 tsp hoi sin sauce
- Coriander sprigs
- 1 piece banana leaf
Method
- Steam the broken rice using absorption method with one cup of water.
- Fry the garlic, chilli and ginger in oil. Break in the eggs. Allow to set for a minute, then mix about to make an omelette.
- Remove from the wok and set aside.
- Cook the Chinese sausage for one minute then add in the gai lang and fry for several minutes.
- Add in the rice, tempeh, spring onions, fried shallots and sesame seeds. Add back in the egg. Mix all together.
- Add a dash of hoi sin sauce and cook for a further minute.
- Lay a banana leaf on a plate and put the fried rice on top.
Garnish with coriander leaves.
