Stir fry Broken Rice with Chinese Sausage and Gai Lang



  • 1 cup broken rice
  • clove garlic
  • 1 chilli
  • 2 eggs
  • 1 tsp ginger chopped
  • 1 tbsp spring onions chopped
  • Chinese sausage
  • 1/4 cup coriander
  • 2 tbsp Fried shallots
  • 2 tbsp sesame seeds
  • 75 g tempeh
  • 1 bunch gai lang
  • 1 tsp hoi sin sauce
  • Coriander sprigs
  • 1 piece banana leaf


  1. Steam the broken rice using absorption method with one cup of water.
  2. Fry the garlic, chilli and ginger in oil. Break in the eggs. Allow to set for a minute, then mix about to make an omelette.
  3. Remove from the wok and set aside.
  4. Cook the Chinese sausage for one minute then add in the gai lang and fry for several minutes.
  5. Add in the rice, tempeh, spring onions, fried shallots and sesame seeds. Add back in the egg. Mix all together.
  6. Add a dash of hoi sin sauce and cook for a further minute.
  7. Lay a banana leaf on a plate and put the fried rice on top.
    Garnish with coriander leaves.
