
Southwestern Sweet Potato Soup
Yield: 4 servings
Ingredients
- ¼ cup of butter
- 1 onion, chopped
- 1 head of garlic, chopped
- 2 sweet potatoes, diced or shredded, unpeeled
- 6 cups of orange juice or 6 cups of chicken broth or some of both
- ½ cup of heavy whipping cream
- 1tsp of chili powder
- 1 tsp of cumin
- 1 tsp of cinnamon
- ½ tsp of salt
Method
- In a soup pot over medium heat, melt the butter. Sauté the onions and garlic until they are golden brown and delicious, a few minutes. Add the sweet potato, orange juice, whipping cream, chili powder and cumin. Cook until the potatoes are soft, about 15 minutes. Whisk in the cinnamon and salt, smoothly puree with an immersion blender, serve and share.
