Saffron Almond Rice

Yield:  4 servings


  • 1 cup basmati rice
  • 2 cups water
  • 1 large, extravagant pinch of saffron
  • 1/2 cup toasted almond slivers
  • 1/2 cup dried apricots, chopped
  • Sprinkled sea salt and freshly ground black pepper, to taste


  1. Pour the rice and water into a small pot with a lid and add saffron, almond, apricot and seasoning.
  2. Stir gently.
  3. Bring to a slow steady simmer, stir and cover with a tight fitting lid.
  4. Simmer for 15 minutes.
  5. Without opening the lid turn off the heat and let the pot rest at least five to ten minutes or so before serving. Enjoy!
