Roasted Breakfast Tomatoes

Serves 4-6


  • 4 ripe tomatoes, halved
  • 2 tbsp olive oil
  • 2 garlic cloves, crushed
  • 2 tsp chopped thyme leaves


  1. Preheat the oven to 190C (Gas Mark 5 / 375F).
  2. Lay the tomatoes, cut side up, in a single layer on a baking sheet lined with parchment paper. Drizzle the olive oil over and sprinkle with the garlic and thyme. Roast in the oven for 40 minutes until softened & just catching colour.
  3. Serve on their own with some delicious toasted & buttered bread or with your favourite breakfast or brunch dish.
