Roasted Breakfast Tomatoes
Serves 4-6
Ingredients
- 4 ripe tomatoes, halved
- 2 tbsp olive oil
- 2 garlic cloves, crushed
- 2 tsp chopped thyme leaves
Method
- Preheat the oven to 190C (Gas Mark 5 / 375F).
- Lay the tomatoes, cut side up, in a single layer on a baking sheet lined with parchment paper. Drizzle the olive oil over and sprinkle with the garlic and thyme. Roast in the oven for 40 minutes until softened & just catching colour.
- Serve on their own with some delicious toasted & buttered bread or with your favourite breakfast or brunch dish.
