
Puttanesca Dipping Sauce

Ingredients
- 1 tablespoon of olive oil (15 ml)
- 1 shallot, finely chopped
- 1 clove of garlic, minced
- 1 tablespoon of tomato paste (15 ml)
- 2 anchovy fillet, finely chopped
- 1/4 cup of diced, pitted black olives (60 ml)
- 1 tablespoon of capers (15 ml)
- 3 tomatoes, diced
- A pinch of chili flakes
- 1/4 cup parsley (60 ml)
- Zest of 1/2 lemon
- Salt and pepper
Method
- Heat olive oil in a saucepan on medium heat. Add shallot and sautee for 2 minutes. Add garlic, tomato paste, anchovy, olives, capers and fresh tomato. Sautee for another 5 minutes. Season with salt, pepper and chili flakes. Add a little water if too thick. Add parsley and lemon zest. Serve with the fried calamari.
