Pistachio Mint Pesto

Yield: 1 cup


  • 1 large bunch of fresh mint
  • 1 small log of softened goat cheese
  • 1 cup of pistachio nuts
  • ½  cup of olive oil


Pile all ingredients together in your food processor. Process and puree until rustically smooth, still a bit chunky but functionally blended. Serve with lamb!
