Pistachio Mint Pesto
Yield: 1 cup
Ingredients
- 1 large bunch of fresh mint
- 1 small log of softened goat cheese
- 1 cup of pistachio nuts
- ½ cup of olive oil
Method
Pile all ingredients together in your food processor. Process and puree until rustically smooth, still a bit chunky but functionally blended. Serve with lamb!
