Peanut and Spicy Orange Sauces

Ingredients
- For the peanut sauce:
- 1/2 cup veal stock (125 ml)
- 1/4 cup smooth peanut butter (60 ml)
- 1 tablespoon soy sauce (15 ml)
- 1 tablespoon rice wine vinegar (15 ml)
- 1 tablespoon honey (15 ml)
- 1/2 teaspoon toasted sesame oil (2 ml)
- Salt and pepper
- For the spicy orange sauce:
- 1/4 cup Mirin (60 ml)
- 2 tablespoons rice vinegar (30 ml)
- 1 teaspoon fish sauce (5 ml)
- ½ teaspoon chili flakes (2 ml)
- 1/2 teaspoon Sriracha (2 ml)
- Zest of 1 orange
- Juice of 2 oranges
- 1 tablespoon grated ginger (15 ml)
- 1 tablespoon honey (15 ml)
- 1 small garlic clove, minced
- 1 teaspoon corn starch diluted in a little water (5 ml)
Method
- For the peanut sauce: In a small saucepan on medium heat, mix all the ingredients. Stir and cook for about 5 minutes until reduced to a creamy sauce. Set aside.
- For the spicy orange sauce: In a small saucepan, whisk all the ingredients and bring to a boil. Let simmer for about 1 minute until it thickens. Set aside.
- For serving: Serve with dumplings, egg rolls or spring rolls.
