NY Strawberry and Cherry Cheese Cake

In Martini Glasses


  • 1 packet Tennis Biscuits
  • 100 g Melted butter
  • 250 ml Double Cream
  • 4 tbsp Icing Sugar
  • 225g Cream Cheese
  • 1 Punnet Strawberries
  • 1 Punnet Cherries


  1. Crush biscuits and combine with the melted butter
  2. Line the base of the martini glasses with a few tablespoons of the mixture
  3. Beat the cream until it forms soft peaks
  4. Beat in the icing sugar & cream cheese until well blended
  5. Pour mixture into the martini glasses on top of the biscuits
  6. Add a layer of thinly sliced strawberries and top with more of the cream cheese mixture
  7. Allow to set in the fridge for at least an hour
  8. Once set, garnish with a fresh cherry and strawberry
