Nutty Couscous


  • 375ml couscous
  • 375ml chicken stock
  • Pinch of salt
  • 75g roasted pistachios
  • 100ml roasted flaked almonds
  • Chopped coriander


  1. Bring the stock up to the boil and add a pinch of salt.
  2. Pour the couscous into the stock and stir.
  3. Cover the pot with a tight fitting lid and remove from the heat.
  4. Leave the grains to swell and absorb moisture.
  5. Use a fork to fluff up the grains.
  6. Add the almonds, pistachios, reserving some to garnish.
  7. Add the chopped coriander.
  8. Stir well to combine and garnish with nuts.
