New Potatoes and pea and mint puree

NEW POTATOES  

Serves 6

Ingredients

Method

  1. Bring a saucepan of water to the boil.  Wash the potatoes well; add a sprig of mint into the water with a big pinch of salt. 
  2. When the water is boiling, tip in the potatoes, cover and boil until they are cooked. 
  3. Drain and leave to sit in the dry saucepan with the lid on with the heat off (obviously) if you need to let them sit for a few min.  They can sit like this for half an hour easily.
  4. When ready to serve, put them into a bowl with few knobs of butter on top, and some sea salt.

PEA AND MINT PUREE

Method

  1.  Cook the peas in boiling water with a pinch of salt, with the lid off, for 3 or 4 min, until they are just cooked. 
  2. Drain and tip into a food processor and whiz up with the butter, mint and some sae salt and pepper to taste. 
  3. If you are making it ahead of time, make sure that you do not cover it while it is hot, so as to retain the fresh green colour, and do not simmer it for ages, just heat it up when you want it.
