Minted Couscous

Yield 4 Servings


  • 1 1/2 cups of boiling water
  • a bunch of fresh mint
  • 1 cup of couscous
  • 2 tablespoons of olive oil
  • the zest and juice of 1 lemon
  • a second bunch of fresh mint, chopped
  • ½ teaspoon of salt


  1. Add the water and the first measure of mint in a medium saucepan over medium heat and simmer for a few minutes to infuse the flavours.Strain the mint leaves out and discard. Add the couscous, olive oil, lemon, chopped mint and salt to a bowl. Cover with the boiling mint infused water. Let stand 5 minutes. Fluff with a fork and serve.
