
Minted Couscous
Yield 4 Servings
Ingredients
- 1 1/2 cups of boiling water
- a bunch of fresh mint
- 1 cup of couscous
- 2 tablespoons of olive oil
- the zest and juice of 1 lemon
- a second bunch of fresh mint, chopped
- ½ teaspoon of salt
Method
- Add the water and the first measure of mint in a medium saucepan over medium heat and simmer for a few minutes to infuse the flavours.Strain the mint leaves out and discard. Add the couscous, olive oil, lemon, chopped mint and salt to a bowl. Cover with the boiling mint infused water. Let stand 5 minutes. Fluff with a fork and serve.
