
Mini Manhattan Burgers
Mini Manhattan Burgers with Cajun Potato Wedges
Ingredients:
For the Burgers
- Fresh Cocktail Rolls
- 200g Beef Mince
- 200g Pork Mince
- 2 Cloves Crushed Garlic
- 1 Onion grated
- 1 egg
- Breadcrumbs
- Teriyaki Sauce
- Fresh Mint
- Lettuce
- Tomato
For the Potato Wedges
- Cajun Spice
- Potatoes
- Olive Oil
For the Dressing
- Mayonnaise
- Basil Pesto (bought or home made)
Method:
- Slice the potatoes into thick wedeges
- Drizzle with Olive Oil
- Sprinkle with Cajun spices
- Bake in a 180 degree oven for 45 minutes until golden and crispy
- Combine the beef and pork mince
- Add the grated onion and crushed garlic
- Add the egg, teriyaki sauce and enough breadcrumbs to bind the mixture (about a handful)
- Finely chop the mint, and add to the mixture
- Season with salt and pepper
- Form the burgers into small patties (to fit into the cocktail burgers)
- Fry in a hot griddle pan (about 3 – 4 minutes on each side)
- Mix a few tablespoons of pesto with some mayonnaise to taste
- Build the burgers with a piece of lettuce, and slice of tomato
- Add a teaspoon of sauce on top of the burger patty
