Perfect Chicken Burgers

Most chicken burgers never have great texture. This recipe requires you to add thin strips of fresh chicken breast meat. This will provide the burger with a nice firm bite.



  • 1 24-inch (60 cm) regular cedar plank, soaked in water
  • 4 cloves garlic, minced
  • 1 medium sweet onion, diced
  • 1 large egg
  • 2 lb ground chicken, icy cold from the refrigerator 1 kg
  • 1 lb boneless, skinless chicken breasts, thinly sliced into strips 500 g
  • 3⁄4 cup crispy fried onion pieces (available in Asian grocery stores) 175 mL
  • 1⁄2 cup Japanese panko bread crumbs 125 mL
  • 1⁄4 cup grated Parmesan cheese 60 mL
  • 1 Tbsp Bone Dust BBQ Seasoning (p. 46) 15 mL
  • 1 Tbsp chopped fresh parsley 15 mL
  • 1 Tbsp olive oil 15 mL
  • 8 balls Bocconcini (1-in. round) cheese, frozen
  • 1⁄2 cup Lindemans Bin 65 Chardonnay 125 mL
  • 1⁄2 cup melted butter 125 mL
  • 8 grape or cherry tomatoes 8


  1. In a large bowl, combine garlic, onion, egg, ground chicken, sliced chicken breast, crispy fried onion pieces, bread crumbs, Parmesan cheese, Bone Dust BBQ Seasoning, parsley and olive oil. Mix well.
  2. Form chicken mixture into 8 equal baseball-shaped burgers. Push a hole into the center of each burger to form a well. Place a frozen Bocconcini into the center of each burger and fold the meat around to seal cheese in the center. (NOTE: Putting the cheese in the freezer keeps it from melting too quickly when grilling burgers.) Cover and place burgers in refrigerator for 1 hour.
  3. In a bowl, combine white wine and melted butter.
  4. Preheat grill to medium-high. Place burgers evenly spaced onto plank. Place plank on grill and close lid. Plank bake for 30 to 40 minutes, until chicken burgers are fully cooked, moist and juicy, basting with white wine butter sauce.
  5. Just before burgers are cooked, grill 8 grape or cherry tomatoes until lightly charred and tender. Place one charred tomato on top of each planked chicken burger. Remove from grill and serve immediately on your favorite kind of bun with burger condiments.
