Lemon Cordial


  • 500ml Lemon Juice
  • 500ml Water
  • 1 Cup Sugar
  • Optional: Rosemary, Mint, Lemon Verbena, Ginger


  1. Start by squeezing enough lemons to make 500ml of lemon juice (7-10 lemons)
  2. Add a cup of sugar to 500ml of boiling water and stir until the sugar is dissolved
  3. At this stage you can add your optional flavour (Rosemary, Mint, etc.)
  4. Add 500ml of lemon juice to the boiling water
  5. Once the lemon cordial reaches boiling point, turn off the heat and let it cool down a bit
  6. Pour the lemon cordial through a sieve and decant into a sterilised bottle
  7. Dilute 1 part cordial with 3 parts water
