Home made spicy tomato sauce

Yudhika Sujanani takes her culinary inspiration from Greece; the fresh aromatic Mediterranean flavours come alive in today’s Menu.  She’s preparing Marinated Cumin & Ginger Lamb Chops, a side dish of Butter Beans with Feta & Herbs, a spicy tomato sauce and to finish off the meal a Cinnamon Halva Cake.


  • 50ml sunflower oil
  • 1 onion, finely chopped
  • 5ml coarse salt
  • 5ml crushed ginger and garlic
  • 5 – 10ml finely chopped green chilli
  • 400g chopped tomatoes
  • 5ml ground cumin
  • 10ml ground coriander
  • 10ml brown sugar
  • 15ml white vinegar


  1. Add the onion and salt, saute until light golden brown.
  2. Stir in the ginger, garlic and green chilli.
  3. Fry for a few seconds, add the tomatoes.
  4. Add the ground cumin and coriander.
  5. Simmer until the tomatoes soften and use the back of a wooden spoon to break down the lumps.
  6. Sprinkle the brown sugar into the sauce and add the vinegar.
  7. Simmer for a minute.
