Grilled Prawns

Serves 4 – 6
Time: 15 minutes

Ingredients

  • 12 king prawns, deveined, split lengthways
  • juice of 1 lime
  • marinade
    • 2 cloves garlic, finely chopped
    • 2 long red chilli, deseeded, finely chopped
    • ½ cup flat leaf parsley, finely chopped

Method

  1. For the marinade, combine all ingredients in a bowl. Rub all over split prawns and transfer to the fridge to marinate for 1 – 2 hours.
  2. Drizzle with a generous amount of olive. Arrange prawns on barbeque, split side down. Cook for 2 – 3 minutes each side.
  3. Transfer to a plate, squeeze over lime juice and serve.
