Mediterranean Lemon Chicken

Material / ingredients required

The bake:

  • 4 potatoes, thinly sliced
  • 1 red onion, peeled and thinly sliced
  • 125g grated mature cheddar cheese
  • 1 clove crushed garlic
  • Salt and pepper, to taste
  • 1 cup of cream
  • 10ml flour
  • ½ cup grated parmesan


  • 4 butterflied chicken breasts
  • ½ cup of milk in a flat plate
  • 4 tbsp flour
  • 2 tbsp fresh thyme leaves
  • Salt and freshly ground black pepper


  • 1 x 410g can artichoke hearts cut into 3 slices each
  • 60g pitted black olives roughly chopped
  • ½ cup roughly chopped Italian parsley
  • Zest and juice of 1 lemon
  • 1 red pepper cubed and light fried
  • Juice of 1 lemon
  • 2 tbls olive oil
  • 1 clove crushed garlic


Step 1:

Layer the onions and potatoes and cheddar cheese, seasoning each layer lightly.

Step 2:

Mix the cream and flour together and season lightly, pour over the potatoes and sprinkle with the parmesan cheese.

Step 3:

Place the Pyrex on the low rack on the metal tray.

Choose the menu, press start. After cooking, remove from the oven and stand for 10 minutes

Step 4:

Serve drizzled with honey and sprinkled with icing sugar.


Step 1:

Dip the chicken breast in the milk.

Step 2:

Mix the flour and thyme together and season with salt and pepper, dip the damp chicken breasts into the flour and dust both sides, lay them onto a flat tray till ready to fry.


Step 1:

Mix the salad ingredients together lightly and set aside till needed.

Step 2:

Just before you have finished cooking the last chicken breast, warm the artichoke mixture and top each breast with it.
