Award winning luxury caterer and expert chef Vicky Crease will show you what to cook for any occasion – from the starters to the desserts through to the finale of the evening, the dessert.

Vicky will take you through her delicious recipes step-by-step so you too can prepare the perfect meal. And to top it all off Vicky will also give you expert advice on how to set your table and present your meal.

Episode 12 – Love it for Lunch

In Fresh & Simple today, Vicky puts together the perfect lunchbox for your kids. Inside, you’ll find chicken mayonnaise rolls with avocado, watercress and cashew nuts, chewy granola cookies and delicious and healthy fruit skewers.

Episode 11 – Turkey with a Twist

In the second of our festive season episodes Vicky shows you how to prepare an unconventional South African Christmas menu. For starters we’ll prepare delicious Turkey burgers with Cranberries and choriso. The Main course is grilled lamb cutlets with mint jelly and the dessert is a berry & granadilla pavlova stack.

Episode 10 – A Traditional Christmas

As the festive season approaches everyone wants to cook the best holiday feast. In the first of two Christmas-themed episodes, Vicky prepares the ultimate traditional Christmas meal, starting with roast turkey with Vicky’s famous stuffing served with oven roasted potatoes with leeks and hazelnuts as well as a delicious Pistachio and cranberry sauce. For dessert Vicky serves up an indulgent, Panettone with berries and cinnamon cream.

Episode 9 – Simply Med

Today, Fresh and Simple features a variety of simple Mediterranean dishes for a quiet night in. We start off with an eggplant, capsicum and bocconcini terrine, followed by an unusual pizza made with phyllo pastry, feta, olives and cherry tomatoes. And we finish off with a delectable berry and mringue ice cream cake.

Episode 8 – Dressed to Kill

Today’s Fresh & Simple salads are ‘dressed to kill’ as Vicky prepares an assortment of ready-to-muddle salad dressing combinations to use on a variety of salads. She shows how to combine a mixture of young salad leaves, parmesan tuilles, nuts, cheeses & fruits to build a mouth-watering salad and gives you the recipe to refresh your guests with the perfect Cosmopolitan.

Episode 7 – Meat Free Feast

Fresh & Simple goes vegetarian today with a hearty starter of asparagus mousse, followed by spinach and ricotta gnocchi with sage butter, and a healthy plum and nectarine compote with rose’ wine syrup, served with nougat.

Episode 6 – Indian Indulgence

Fresh & Simple is full of colourful Indian delights this week as Vicky shows how to prepare Tandoori chicken with aromatic basmati rice, pineapple chutney, cucumber raita and bananas in cinnamon milk. Today’s dessert is a chilled lychee and almond kulfi.

Episode 5 – Italian el Fresco

Al Fresco Italian is the theme for today’s Fresh & Simple. Vicky starts by serving up a pea, broad-bean, mint & pecorino brochette, followed by a veal saltimbocca with Hasselback roast potatoes with bay leaves, garlic & lemon. Today’s dessert is a vanilla panacotta with a berry coulis.

Episode 4 – Fish to Thai for

Fresh & Simple heads outdoors today with a beach-themed fish- braai. Vicky starts off with a whole barbequed fish in a Thai-style marinade served with wraps and a mango salsa. This is followed by a cold prawn & noodle salad with a sesame and peanut dressing. We finish off with crispy chocolate & banana wontons with a coconut & chilli dipping sauce.

Episode 3 – Make it Moroccan

The theme for today’s Fresh & Simple is an authentic Moroccan Dinner. For starters, Vicky prepares a delectable snack platter with an aubergine & yoghurt dip, hummus, and a tomato, onion & mint salad served with flatbread. The main course is a tagine of lamb with pears, caramelized baby onions, coriander couscous, red pepper, almonds & feta and Vicky serves up dessert of pistachio and rosewater m’hench.

Episode 2 – Ooh La La!

On Fresh & Simple this week, Vicky shows you how to host an al-fresco French lunch. On the menu today are prawn & asparagus puff-pasty tarts with Hollandaise sauce; a Nicoise salad with warm seared tuna and fresh fruit phyllo pastry Mille Feuilles. And to set the perfect mood, Vicky creates a Parisian-inspired table setting.

Episode 1 – Blissful Baby Shower

In the first episode of Fresh & Simple, host Vicky Crease creates the perfect baby shower. Vicky makes a delicious salmon platter with lime chunks, olives, chives, crème fraiche & crostini; tempts the sweet-tooth with a lemon, almond & ricotta cake and a honey-pancake stack and creates a quirky and appealing table-setting to make a baby shower to remember.
