Summer Sizzle with Hilary Biller

Braaiing is a favourite South African past time, but gone are the days of the standard chops and wors. There’s a braai revolution happening, and Hillary Biller is in on the game, having recently compiled a recipe book for Fuss Free Braais.

In an all new TV show, Summer Sizzle, Hilary will teach you the art of the ultimate braai, putting together full braai meals from preparation right through to cooking and presentation. She’ll also teach you what the best meat is to use for specific types of dishes and the perfect rubs and marinates to bring out its full potential.

Learn to create wonderful dishes, from the most succulent roast fillet to African Lamb and Asian pork kebabs, with wonderful accompaniments like grilled courgette and pea salad, and garlic baked sweet potatoes. Not forgetting the vegetarians among us, there are also some delicious meat free dishes like Cajun aubergine steaks and stuffed mushroom caps.

Preparation is key, so Hilary will also teach you the nitty gritty of generating the perfect heat for your particular dish, whether it’s over gas or coal, you’ll never get hot under the collar again.

Episode 1 – Mexican Fiest

It’s a Mexican Fiesta on Summer Sizzle and Hilary creates a delicious meal of tequila marinated beef fajita, grilled to perfection and served with fresh salsa and guacamole.

She also prepares a succulent side dish of griddled corn topped with feta cheese and chilli, and to finish, the juiciest traditional Tres Leches Cake.

Episode 2 – Asian Feast

This week on Summer Sizzle, Hilary is taking inspiration from the east, using wonderfully fragrant, traditional Asian flavours to create a delicious feast on the braai.

To start, Korean marinated short-ribs, followed by grilled salmon with a red curry sauce and a vibrant, Thai grapefruit and prawn salad.

Finally, a quirky dessert of grilled pineapple porcupines with ginger and cayenne pepper.

Episode 3 – Hot Chicks

Chicken is a favourite on the braai, but so many people struggle to get it just right.

Hilary has two deliciously succulent chicken dishes this week, including sticky oyster sauce chicken wings and a chicken flattie with cream cheese stuffing. Served with a warm lentil, cherry tomato and haloumi salad, this is the perfect menu for a light summer braai.

Episode 4 – Greek Celebration

Lamb is synonymous with Greek food, and this week it’s the star of the show as Hilary creates a traditional feast of lamb kebabs with roasted feta. To go with this, two traditional dips of fresh humous and tzatziki and a vibrant carrot and orange salad.  To finish off, a delicious honey cheese bake topped with pomegranate rubies.

Episode 5 – Firing Up Italy

Italian food lends itself to the grill, and this week on Summer Sizzle, Hilary brings Italian flair to the braai. On the menu, succulent sirloin steak with a porcini rub served with griddled polenta and roasted peppers. To finish, she’s creating a wonderfully fresh Limoncello tart full of zesty summer flavours.

Episode 6 – Twist on Tradition

The traditional South African braai usually includes the stock standard coil of wors. This week Hilary is bringing new life to an old favourite with an interesting recipe for boerewors kebabs, served with succulent stuffed mushrooms.

She’ll also show you a brilliant party starter of apricot glazed snoek, as well as a perfect ending of Bar One cups with biscotti dippers

Episode 7 – Burger Bonanza

It’s a casual day out today as Hilary prepares tasty burgers on the braai.

Sesame chicken burgers with an Asian style marinate for the meet eaters, and deliciously fragrant falafel burgers for a vegetarian alternative.

To go alongside, she’s also doing a peachy summer salad and chocolate mug cakes for dessert.

Episode 8 –Summer Holiday

Hilary has the ideal menu for a lazy summer day, starting with a raisin and cheese breakfast cake to get things going and salami wheels to snack on through the morning. A delectable smoked beef fillet will be the main event, and for a fun sweet treat to end the day, a popcorn sundae with butterscotch sauce.

Episode 9: Spanish Fiesta

Inspired by Spain and the flavours of the Mediterranean, this week Hilary shows you how to make the perfect Sangria marinated spatchcock chicken, smokey grilled sardines with tomato chutney and an interesting side of chorizo and haloumi sticks. To end it all, a bowl of grilled summer fruit in a honey and herb butter sauce.

Episode 10 – Gone Fishing

The braai is a great way to cook a variety of seafood dishes, and Hilary has a number of interesting ideas.

To start, a fillet of angel fish smoked gently on a plank of wood and ginger beer calamari steaks. The main event is delicious BBQ prawn sticks with a roasted garlic mayo, and then a throwback to childhood with a dessert of praline baked bananas.

Episode 11 – Veg Out

A braai doesn’t have to mean all meat, all the time. This week, Hilary is preparing a delicious vegetarian spread over the coals.

To get the taste buds flowing, tika new potatoes with a yoghurt dipping sauce along with Cajun brinjal steaks.

The main event is a tray bake vegetarian pizza loaded with a selection of fresh summer vegetables, and to top it all off, a decadent Baklava cheesecake.

Episode 12 – Festive Feast

In preparation for Christmas, this week on Summer Sizzle Hilary has the perfect outdoor festive feast ideas. A starter of duck breasts with griddled orange slices followed by a traditional turkey, roasted on the braai. A bright, red salad adds fresh summer flavours and finally, a cooling frozen berry yoghurt loaf brings a refreshing end to the celebration.

Episode 13 – Crowd Pleasers

We end off on a celebratory note with braai ideas perfect for a party.   A cheese melt starter followed by spicy, rosemary flavoured chicken and band aid chicken burgers.   To go with that a dukkah dipped, watermelon and prawn salad and iced berries with a white chocolate sauce for dessert.
