Sweet Potato Purée

Serves: 6

Ingredients 

  • 2 lb (1 kg) sweet potato
  • ¼ cup (60 ml) butter
  • ¼ cup (60 ml) chicken broth
  • Salt and pepper

Method

  1. Meanwhile, wrap dabs potatoes in aluminium foil. 
  2. Cook in oven approximately 1 ½ hours or until tender.  Peel potatoes.
  3. In food processor, purée potatoes with other ingredients.
  4. Season to taste with salt and pepper.
