Sweet Potato Purée

Ingredients
- 2 lb (1 kg) sweet potato
- ¼ cup (60 ml) butter
- ¼ cup (60 ml) chicken broth
- Salt and pepper
Method
- Meanwhile, wrap dabs potatoes in aluminium foil.
- Cook in oven approximately 1 ½ hours or until tender. Peel potatoes.
- In food processor, purée potatoes with other ingredients.
- Season to taste with salt and pepper.
