Morello Cherries Flambée

  • 1 tbsp (15 ml) butter
  • 1 – 14 oz (398ml) jar of Bing cherries or Morello cherries, drained
  • 1 tbsp (15 ml) sugar
  • 2 tbsp (30 ml) dark rum
  • Vanilla Ice Cream


  1. Melt the butter in a skillet. Brown the cherries and sugar in the butter over high heat for 2 minutes.
  2. Add the rum and let it flare immediately.
  3. Let reduce for 1 minute.
  4. Serve hot over the ice cream.

There is always a jar of Bing cherries stored in the pantry. This permits me to make this dessert whenever friends drop in unexpectedly.
