Fish Filets Breaded with Shredded Wheat

Ingredients

  • 1 ½ cups (375 ml) shredded wheat, reduced to crumbs
  • 4 filets of 6.2 oz. (175 g) of pangasius or tilapia
  • ½ cup (125 ml) all purpose flour
  • 3 eggs, beaten lightly
  • 3 tbsp (45 ml) olive oil
  • For the Tartar Sauce
    • ½ cup (125 ml) mayonnaise
    • 1 tbsp (15 ml) sweet pickles, chopped
    • 1 tsp (5 ml) capers, chopped
    • 1 tbsp (15 ml) lime juice
    • 1 tsp (5 ml) fresh chives, finely chopped

Method

  1. Put the flour in one bowl, the beaten eggs in a second bowl and the cereal in a third bowl.
  2. Cut each filet in 2, lengthwise. Sprinkle with salt and pepper. Dip the filets in the flour, then in the eggs. Shake off the excess, and then cover with the cereal crumbs. In a frying pan, brown the filets in oil for 2 to 3 minutes on each side over medium heat.
  3. For the Tartar Sauce
    1. In a bowl, mix the ingredients. Sprinkle with salt and pepper.
    2. Serve with a green salad.
