Lemon Biscuits

Makes about 25/vegetarian

These are incredibly simple and gorgeous biscuits. Do make sure that the butter you use is nice and soft.  They are very tasty on their own with a cup of tea or with the Lemon and Ginger Pudding.  The biscuits can be cut into any kind of shape, such as hearts for Valentine’s Day, numbers for a birthday party or little holly leaves or Christmas trees during the festive season.


  • 175g (6 oz) plain flour
  • Finely grated zest of 1 lemon
  • 100g (40 oz) butter, softened
  • 50g (2 oz) caster sugar


  1. Preheat oven to 180˚C (350˚F), Gas mark 4.  Put the flour and lemon zest into a mixing bowl, rub in the soft butter, add the caster sugar and bring the whole mixture together to form stiff dough. 
  2. Do not add any water.
  3. Roll the dough out t a thickness of about 5mm (1/4in)   and into shapes. 
  4. Transfer carefully to a baking tray and bake in the oven for 6-10min until they are pale golden. 
  5. Cool on a wire rack.

Rachel’s Handy Tip

I quite often roll out this dough between two sheets of cling film, as I do for pastry.  Chill the slightly flattened piece of dough before rolling out and then the butter does not stick to the cling film.
