Garlic Fried Spinach

Yield: 4 servings.


  • 2 tbsp. olive oil
  • 1 tbsp. butter
  • 1 yellow pepper, diced 
  • 1 to 2 garlic cloves, roughly chopped
  • Half 5-ounce package baby spinach
  • Coarse salt and freshly cracked pepper, to taste


  1. Heat large fry pan on high. Add olive oil and butter. When the butter begins to sizzle add the peppers. Sauté for 1 to 2 minutes until tender crisp.
  2. Add garlic and cook until soft, about 1 minute. Add the spinach. Stir for 30 seconds. Take off heat – spinach should still be green and just wilted. Season with salt and pepper, to taste.
