Broccolini & Carrot Medley

Yield: 8 servings


  • 16 broccolini florets
  • 16 baby carrots, peeled with 2-inch of tops left on
  • 1 tbsp. olive oil
  • Coarse salt and freshly cracked pepper, to taste


  1. Bring large pot of salted water to boil over high heat. Add carrots and boil 2 minutes. Add broccolini and cook until vegetables are just tender crisp, about 2 to 3 minutes. Drain.
  2. Heat olive oil in skillet on high. Sauté for 3 to 5 minutes until heated through. Season with salt and pepper.
