Broccolini & Carrot Medley
Yield: 8 servings
Ingredients
- 16 broccolini florets
- 16 baby carrots, peeled with 2-inch of tops left on
- 1 tbsp. olive oil
- Coarse salt and freshly cracked pepper, to taste
Method
- Bring large pot of salted water to boil over high heat. Add carrots and boil 2 minutes. Add broccolini and cook until vegetables are just tender crisp, about 2 to 3 minutes. Drain.
- Heat olive oil in skillet on high. Sauté for 3 to 5 minutes until heated through. Season with salt and pepper.
