Spice Mixtures from Excursions
Ingredients
- Caribbean Spice Blend
- 1 tbsp. allspice berries
- 1 tbsp. cumin seeds
- 1 tsp. coriander seeds
- 1 tsp. dried thyme leaves
- 1 tsp. brown mustard seeds
- 1 tsp. dried ginger
- 1 ¼ tsp. cinnamon, preferably Ceylon cinnamon
- 1 tbsp plus ¼ tsp turmeric powder
- Pinch of freshly grated nutmeg
- Finely grind spices in spice grinder or with mortar and pestle.
- North African Spice Blend
- 2 tbsp. paprika
- 1 tbsp cumin seeds
- ½ tbsp. cinnamon
- ½ tbsp. dried ginger
- ½ tbsp. turmeric powder
- Pinch of nutmeg
- 1/8 tsp. cayenne
- ½ tbsp. black pepper
Method
Finely grind spices in spice grinder or with mortar and pestle.
