Sweet Potatoes with Rhubarb


  • sweet potatoes
  • rhubarb stalks
  • salt and pepper
  • water


  1. Slice the sweet potatoes into rounds and cut rhubarb into chunks.
  2. Place in an ovenproof dish and season with salt and pepper.
  3. Add just enough water to cover the base of the dish and cover with foil.
  4. Bake at 180 °C until potatoes are tender.
