Honeyed Oranges

Prepare these oranges in advance to allow the flavours to develop. They’re a tangy foil to Vanilla Citrus Terrine or vanilla ice cream.

Prep time: 10 mins + macerating
Serves: 6


  • 6 oranges
  • 2 tbsp runny honey
  • 2 tbsp caster sugar
  • 2 tbsp currants
  • 2 tbsp sherry or rum


  1. Peel the oranges, removing all pith.
  2. Cut the flesh into segments and place in a serving bowl.
  3. Drizzle with runny honey, sugar, currants and sherry or rum and chill for at least an hour or up to 24 hours before serving.
