Easy Cheesy Spinach

Yield: 4 servings.

BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add the zest and juice with the salt and pepper.


  • 2 tablespoons unsalted butter
  • 1 medium white onion, finely chopped
  • 1 cup (8oz) cream cheese, softened
  • 2 10oz boxes of frozen spinach, thawed and squeezed dry
  • 3 tablespoons water
  • 1 teaspoon freshly grated nutmeg
  • Kosher salt and white pepper to taste


  1. Heat butter in a 12-inch sauté pan over moderate heat, add onion and cook until soft, about 8 minutes.
  2. Whisk in cream cheese and let melt. 
  3. Fold in spinach until evenly combined. 
  4. Add water if mixture seems to dry. 
  5. Sprinkle nutmeg on top and season with salt and pepper to taste.
