Celery, Mushroom and Parmesan Salad

Yield: 4 servings.


  • 1 cup celery, shaved with a vegetable peeler
  • 1 cup white mushrooms, sliced thinly
  • 1 cup shaved parmesan cheese
  • 3 tablespoon freshly squeezed lemon juice
  • 6 tablespoons extra-virgin olive oil
  • Kosher salt and freshly cracked black pepper


  1. In a large bowl toss celery, mushrooms and Parmesan cheese until well combined.
  2. Pour the lemon juice and oil over salad and toss until well combined.
  3. Season with salt and pepper to taste.
