Delicious Chickpea, Feta and Coriander Salad


  • 1 tin drained chickpeas
  • 1 packet mixed lettuce
  • 10 baby tomatoes, cut in half
  • ½ packet mixed baby herbs (beetroot, watercress etc)
  • 1 teaspoon cumin seeds
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • salt, pepper to taste


  1. Put the lettuce in a bowl.
  2. Add the chickpeas, feta cheese and baby herbs.
  3. Just before serving, drizzle the whole cumin seeds, balsamic vinegar and olive oil over the salad.
  4. Season with salt and pepper, mix and serve.
