Delicious Chickpea, Feta and Coriander Salad
Ingredients
- 1 tin drained chickpeas
- 1 packet mixed lettuce
- 10 baby tomatoes, cut in half
- ½ packet mixed baby herbs (beetroot, watercress etc)
- 1 teaspoon cumin seeds
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- salt, pepper to taste
Method
- Put the lettuce in a bowl.
- Add the chickpeas, feta cheese and baby herbs.
- Just before serving, drizzle the whole cumin seeds, balsamic vinegar and olive oil over the salad.
- Season with salt and pepper, mix and serve.
