Coconut Rice Pudding

Ingredients

Rice Pudding

  • 1 Cup Short Grain Rice (Sushi Rice)
  • 3 Cups Coconut Milk
  • ½ Cup Sugar

Coulis

  • 1 tin peaches
  • 1 cup sugar
  • Star anise
  • Fine Coconut

Method

  • In a pot, bring the coconut milk to the boil
  • Add the sugar and rice to the hot coconut milk
  • Add the rice to the coconut milk and allow this to cook in the coconut milk until it is cooked (add additional milk if necessary)
  • While the rice is cooking, heat up ½ cup of water in a pot, and add 1 cup of sugar to the water
  • Allow time for the sugar to dissolve in the water, creating a sugar syrup
  • Add the tinned peaches (or any fruit you would prefer) to the sugar water and let this simmer in the water for about 10 minutes, allowing time for the fruit to soften
  • Allow fruit to cool and add the fruit and syrup to a blender.
  • Blend the mixture until it reaches a smooth consistency
  • Meanwhile, add some fine coconut into a hot, dry frying pan, and toast the coconut until it starts browning
  • Once the rice is cooked, allow it to cool slightly
  • Dish the rice into serving bowls, and top it off with some fruit coulis
  • Garnish your plate with the toasted coconut
  • This pudding can be served warm or cold
