Chuck’s Tartar Sauce

Yield: 4 servings

Ingredients

  • Homemade Mayonnaise:
  • 2 whole eggs
  • 1 tablespoon Dijon mustard (15 ml)
  • 1 litre Canola oil (4 cups)
  • ½ cup water (125 ml)
  • 1 lemon, zested
  • ½ lemon, juiced
  • A good dash of Kosher salt
  • Cracked black pepper
  • For the Tartar Sauce:
  • 4 tablespoons of homemade mayonnaise (60 ml)
  • 1 bunch arugula, chopped
  • 1 large shallot, finely chopped
  • 1 large dill pickle, chopped
  • 1 tablespoon capers, chopped (15 ml)
  • 2 anchovies, minced

Method

  1. For the Homemade Mayonnaise:
    1. Put eggs and mustard in your food processor.
    2. While running the machine, slowly drizzle in the oil until it gets very thick. Add some water and then continue with the oil. Shift back and forth between oil and water .
  2. For the Tartar Sauce:
    1. When all is added, add lemon juice, zest and S & P. Set aside.
    2. Place 4 tablespoons of mayo in a bowl and add all your ingredients finely diced.
    3. Mix together. Mixture should be green, chunky and not too runny.
