Chicken and Lime Lacy Pancakes
Ingredients
For the Chicken
- 4 Chicken Breasts
- Thyme
- Ginger
- Garlic
- Star anise
- Mayonnaise
- Mixed Salad leaves
- Baby herbs
- Beetroot sprouts
For the Pancakes
- 1 Cup all purpose flour
- 2 tbsp Sugar
- 2 tsp Baking Powder
- 1 tsp Salt
- 1 egg
- 1 cup Milk
- 2 tbsp Vegetable oil
- 1 Lemon
- 2 Limes
Method
For the Chicken
- Bring a pot of water to the simmer
- Add the chicken breasts along with a few sprigs of thyme, 2 garlic cloves, star anise and slices of ginger
- Allow this to simmer and poach for 15 minutes.
- Remove the chicken breasts and allow to cool slightly
- Slice the chicken into strips and add a few tablespoons of mayonnaise, the zest of a line and a squeeze of lime juice
- Season with salt and pepper
Pancakes
- Sift all the dry ingredients into a bowl and combine well
- In a separate bowl, mix the milk, egg and vegetable oil together
- Combine the wet and dry ingredients and mix these thoroughly, making sure that there are no lumps in the batter
- You can adjust the consistency of the batter by adding more milk to dilute it, or making it less runny by adding more flour
- Add the finely grated zest of a lime
- Season with some salt and pepper
- Pour this batter into a sqeezy bottle
- Heat a non stick frying pan and spray with cooking spray
- Once the pan is hot, pour the batter into the frying pan using the squishy bottle to making lace patterns
- Let this cook until it starts browning on the bottom, and then turn the pancake to allow browning on the other side as well
- Once cooked, set the pancake aside and continue to make the lace pancakes until you have enough
- Fill the Lace pancakes with the chicken mayonnaise mixture and add some fresh baby herbs and lettuce into the pancake as well
- Serve the pancake with a slice of lime and a few chives as garnish
