Baby mozzarella, Rosa tomato and fresh basil


  • 1 punnet Rosa tomatoes
  • 12-15 small mozzarella balls
  • 1 small packet basil leaves
  • baby lettuce leaves
  • balsamic reduction
  • pesto
  • salt, cracked black pepper
  • wooden/decorative skewers


  1. Pierce the mozzarella ball through the skewer, followed by a basil leaf, then a tomato.
  2. For the next skewer, start with the Rosa tomato followed by a basil leaf and then a mozzarella ball.
  3. Put a mound of fresh lettuce on one corner of the plate and place the skewers neatly across the lettuce, to resemble a Carprese salad.
  4. Season with salt and pepper and make shapes with the balsamic reduction and the basil pesto on the plate. Serve immediately.
