Avocado chocolate pudding
Ingredients:
- 4 large, ripe avocados
- 2/3 cup (160 ml) cocoa powder
- 2/3 cup (160 ml) honey
- ½ cup (120 ml) milk
- ½ teaspoon (2.5 ml) vanilla extract
- 1/8 teaspoon (0.5 ml) salt
- ½ cup toasted sweetened shredded coconut, to
garnish
Method:
- Remove pit from avocados and scoop flesh into a blender. Add cocoa powder, honey, milk, vanilla, and salt to the blender.
- Blitz until thick and creamy, adjusting thickness with more milk if needed. Pour into 4 small serving dishes.
- Divide toasted coconut among 4 servings.
