Asparagus and brie lasagne



  • 90g butter
  • 2 tablespoons fresh sage
  • 180g lasagne sheets
  • 400g green asparagus
  • 400g white asparagus
  • 280g brie cheese
  • 50g grated parmesan
  • Salt and black pepper


  1. Melt the butter in a small pan over medium heat.  Add the sage and fry for 3 minutes or until the butter is golden.  Don’t let the butter burn.  Remove from the stove and set aside.
  2. Place the lasagne sheets in a large pot of boiling water and cook according to the instructions on the packet. Drain. At the same time cook the asparagus until tender.
  3. To serve place a lasagne sheet on each plate, cover with a quarter of the green asparagus, a slice of brie cheese, another lasagne sheet, a quarter of the white asparagus and finally with another slice of cheese.  Sprinkle with grated parmesan and warm under the grill. Pour over the butter and sage sauce, sprinkle with salt and pepper.  Serve immediately.
